Brew 25 - Princess RPA (Rye Pale Ale)

I've wanted to brew a Rye Pale Ale for some time. I'd had a few over the years but it isn't a common style and offered something a bit different to experiment with. 

I based the recipe on Caterpillar by Brewfist - who used Columbus and Motueka hops in theirs. I couldn't get Motueka so after a little research, opted for Saaz hops instead - I'm not entirely sure why but I wanted to move beyond the usual citrus flavours with something a bit more floral or spicy to compliment the earthiness of the Rye malt. 

I selected the Nottingham ale yeast to offer a neutrality in the flavour to allow the malt and hops to shine through. 

Alice helped me to mash in again and loved getting hands on with the malts. She asked if she could name the beer, to which I agreed... 

Mash in as follows: 
  • 23 litres strike water at 66 deg C 
  • 1/2 Campden
  • 3 tsp of Burton crystals
  • 60min mash
After this, I mashed out at 78 deg C for another 5 mins before setting the kettle to 100 deg C. 

A nice rolling boil for 60mins with the following additions: 
  • 1/2 Protafloc tab at 15mins
  • 30g Saaz at 10mins
  • 8g Columbus at 10mins
At gas off - I cooled the wort to 80 deg C and then added: 
  • 30g Saaz
  • 8g Coumbus 
I let these stand for 15mins before draining off the wort into the fermenter. 

Dry hop additons (after 4 days, left in for 4 days): 
  • 30g Saaz 
  • 21g Columbus
Fermented for 14 days at 20 deg C and then bottled. 

Alice named the beer 'Princess' and I honoured my word - the label is below, including a pic of my own 2 princesses.

Notes

Malts: Pale Malt, Rye Malt, Wheat, Carahell, Caramalt
Hops: Saaz and Columbus
Yeast: Lallemand Nottingham Beer Yeast
Original gravity = 1.050 
Final Gravity = 1.008
ABV = 5.5%
Volume into Fermenter: 15 Litres
Batch size = 13.5 Litres (8 x 330ml, 2 x 660ml, 19 x 500ml)
