I first made Gardener's Gloves with GHNB in June 2020 - blog here. A recipe that offered up the chance to add flavour to the brew in the form of adjuncts - Orange and Grapefruit zest. We both really enjoyed this beer and it provided a fine summer ale. A brew that we promised to make again with some changes to the recipe.
So, here we are. Brew day beckons and a few changes to the bill will give us a different take on the original beer. Firstly, we want more zest, more citrus and more hop. Secondly, we want haze. We adapt the malt and hop bill accordingly, increasing the dry hop dosage, planning to add more fruit zest and chucking in some rolled oats should bring this brew to life.
We preheated the mash tun with boiled water again, this worked really well on the last brew and helped the temperature hold for longer. 23 litres of strike water were added at 73 deg C and mashed for 90mins at around 65 Deg C.
Prior to this, water treatment included 1 campden tab and 2tsp of Burton Crystals.
After 90mins, the wort was removed and put to boil. The grist was sparged with around 8litres of water @ 77 deg C and left for infuse for 30mins as we got the main wort to a rolling boil. The sparge water was treated with 1/2 campden tab and 1 tsp of Burton Crystals).
Preboil gravity of 1.057 was achieved (only 1 point below target). Added the first hop addition without a hop bag. We used the extra wort from the sparge to top up the main boil at stages. This kept the amount of wort at a good level.
Rapid cooling using ice bath got us down to 80 deg C when we added the last hop addition with a whirlpool action and left to infuse for 30mins. Once cool enough, we siphoned the wort into the FV and left it outdoors to cool to 20 deg C.
Dry hop added on day 4 including - 40 g Citra, 40g Amarillo, 40g Simcoe, 80g Grapefruit zest and 60g Orange zest.
A good batch size made it to bottling with 14 litres once trub losses were counted. There was about 2 litres lost to the trub as the siphon struggled to pull it over - heavy hop bill plus the citrus peel. Tasting very good already - a good citrus bitter-sweet balance just needs a bit of carb and a few weeks to clean up.

Hops: Northern Brewer, Simcoe, Amarillo, Mosaic, Citra.
Yeast: Fermentis Safale US-05 Yeast (Dried yeast)
